I think he’s still mad Alpha didn’t choose him. How would a veteran feel about being outclassed by a cadet, so to speak?
It doesn’t bode well, but I think Alpha knows what she’s doing. And why.

He certainly looks dangerously aggressive to us, but remember that Saturno can actually give up any limb or organ except his brain and regrow it almost instantly. I think just taking a patch of skin and eating it would be a likely way for a demon to develop the ability to grow its own skin in the future.
